If you answered yes to any of these questions, Quinoa Chili is the perfect dish for you. You don't need any cooking skills to make it; just chop up the ingredients and throw them in a pot. Don't be decieved by the fact it's vegan, vegetarian, and gluten free; it is one of the most flavorful, tasty, dishes I've ever had. Try it and you won't be disappointed!
1 can black beans (rinsed)
1 can tomato sauce
1 cup frozen corn
1 red bell pepper
1 medium onion or leak
2 large garlic cloves
2/3 cup quinoa
2 tbls extra virgin olive oil
3/4 tbls salt
3/4 tsp chili powder
1 1/2 tsp cumin
1/4 tsp cinnamon
Heat the oil in a large pot over medium heat.
Add garlic, onion, red pepper. Saute until the vegetables just begin to soften.
Pour in: tomato sauce plus 1 can of water, quinoa, corn, beans, salt, chili powder, cumin, cinnamon and stir.
Simmer 30 minutes, stirring frequently.
Serve and ENJOY!
